Ingredients
  

For the Calamari Steak
  • 1 calamari steak 4–6 oz Rinsed and patted dry
  • 0.5 cup flour or fine breadcrumbs Light coating
  • salt & pepper To taste
  • 2–3 tbsp oil Olive or neutral oil
For the Sandwich
  • 2 small rolls Toasted
  • 2 tbsp lemon mayo, garlic mayo, or aioli Sauce of choice
  • 1 small tomato Thinly sliced
  • 1 handful greens Lettuce, arugula, or mixed greens
  • 1 pinch chili flakes optional Adds heat
  • 1 squeeze lemon optional For brightness

Equipment

  • 1 Frying pan Medium size
  • 1 Tongs or Spatula For flipping the steak
  • 1 Cutting board To prep toppings
  • 1 Plate For coating the steak
  • 1 Paper towels To pat dry the calamari

Method
 

Step 1 — Prep the Calamari
  1. Rinse the calamari steak under cold water, then pat it completely dry with paper towels.
Step 2 — Tender Press
  1. Gently press the steak with your palm or tap lightly with a meat mallet to ensure even cooking.
Step 3 — Season
  1. Sprinkle salt and pepper on both sides of the steak.
Step 4 — Coat the Steak
  1. Place the steak on a plate and dust lightly with flour or breadcrumbs. Shake off extra coating.
Step 5 — Pan-Fry
  1. Heat oil in a pan over medium heat (about 350°F / 175°C).
  2. Cook the steak 1–2 minutes per side, until pale golden and just firm.
  3. Do not overcook.
Step 6 — Toast the Rolls
  1. Add the rolls to the same pan for 20–30 seconds to get a light toast.
Step 7 — Sauce the Bread
  1. Spread lemon mayo, garlic mayo, or aioli on both sides of the toasted rolls.
Step 8 — Build the Sandwich
  1. Layer in order:
  2. Bottom roll
  3. Sauce
  4. Calamari steak
  5. Greens
  6. Thin tomato slices
  7. Top roll
  8. Press gently so the sandwich holds together.
Step 9 — Serve
  1. Enjoy warm with a squeeze of lemon or chili flakes if desired.

Notes

  • Do not overcook the calamari or it becomes tough.
  • Drying the steak well is key to good browning.
  • Soft rolls work best for bite and texture.
  • For a crispy fried version, double-coat the steak and pan-fry in slightly more oil.
