Ingredients
  

  • 4 boneless skinless chicken thighs
  • 2 carrots sliced
  • 1 zucchini chopped
  • 1 small sweet potato cubed
  • 1 cup green cabbage cubed
  • 2 cups kale or Swiss chard chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp turmeric
  • 6 cups chicken bone broth AIP-compliant
  • 1 tbsp olive oil
  • sea salt to taste
Do NOT add black pepper or paprika (not AIP)

Equipment

  • Large soup pot or Dutch oven
  • Cutting board
  • Sharp knife
  • Wooden spoon
  • Ladle

Method
 

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add garlic and fresh ginger. Sauté gently until fragrant, about 1 minute.
  3. Add carrots, zucchini, sweet potato, and cabbage. Stir to coat with oil.
  4. Pour in the chicken bone broth and bring to a gentle simmer.
  5. Add chicken thighs and simmer for 20 minutes, until fully cooked and tender.
  6. Remove chicken, shred it with two forks, and return it to the pot.
  7. Stir in kale or Swiss chard and season lightly with sea salt.
  8. Simmer for 5 more minutes, then remove from heat and serve warm.

Notes

This AIP soup is gentle on digestion and ideal during the elimination phase of the Autoimmune Protocol. Store leftovers in the refrigerator for up to 4 days or freeze in portions for easy meals during flare-ups.
