Ingredients
  

  • 2 large sweet onions or white onions
  • 1/2 cup white vinegar or apple cider vinegar
  • 1/4 cup sugar
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Optional: 1-2 chopped chili peppers for heat

Method
 

  1. Peel and finely chop the onions or blend them into a puree.
  2. Add onions, vinegar, sugar, garlic powder, black pepper, and lemon juice to a saucepan.
  3. Mix all ingredients together and stir well.
  4. Bring the mixture to a simmer over medium heat, stirring occasionally. Simmer for 10–15 minutes, until the sauce thickens slightly.
  5. Taste and adjust sweetness or tanginess, if needed.
  6. Let the sauce cool for a few minutes, then serve or store.

Notes

  • Texture: Chop very small for a relish-like sauce; brief blend after cooking for smoother.
  • Variations:
    • Hot & Spicy: Add more habanero/jalapeño to taste.
    • Sweeter: +1–2 Tbsp sugar (12–24 g), great for BBQ.
    • Citrusy/Fresh: Stir in cilantro, parsley, or a little extra lemon/lime at the end.
  • Pairings: Grilled chicken or pork, rice & beans, tacos/burritos, roasted veggies, salads.
  • Storage: Refrigerate in a sealed jar up to 7 days. Discard if off-odors, discoloration, or mold appear.
