Ingredients
  

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 tablespoon shortening or butter or coconut oil
  • ¾–1 cup warm liquid water, milk, or coconut milk
  • vegetable oil for frying

Method
 

  1. In a bowl, mix the flour, baking powder, and salt until evenly combined.
  2. Add the shortening, butter, or coconut oil and rub it into the flour until the mixture looks like soft crumbs.
  3. Slowly add the warm liquid while mixing until a soft, smooth dough forms.
  4. Place the dough on a lightly floured surface and knead gently for about two minutes.
  5. Cover the dough with a clean towel and let it rest for 20 to 30 minutes.
  6. Roll the dough thin and cut into halves or quarters. Leave whole for puffy fry jacks or cut a small slit for flatter ones.
  7. Heat oil over medium heat and fry each piece for 30 to 60 seconds per side until golden and puffed.

Notes

Fry jacks puff best when the dough is rested and the oil is hot. Avoid overcrowding the pan. Serve warm with beans, eggs, cheese, or honey.
