Ingredients
  

  • 1 pound Chicken Boiled and cut small
  • 1 pack Chow mein noodles Or use ramen noodles
  • 3 packs Ramen noodles Optional substitute
  • 2 cups Cabbage Shredded
  • 1 Sweet pepper Cut small
  • 1 Onion Cut small
  • 1 tablespoon Soy sauce
  • 1 tablespoon Worcestershire sauce
  • Salt To taste
  • Black pepper To taste
  • 1 small ball Red recado
  • Belizean pepper sauce A few drops A few drops, optional
  • 1 tablespoon Butter

Equipment

  • Large Pot For boiling chicken and noodles
  • Wide pan or skillet For stir-frying
  • Strainer For rinsing noodles
  • Wooden spoon For gentle mixing

Method
 

  1. Place the chicken in a pot with water. Add salt, black pepper, and red recado. Boil until fully cooked. Let cool, then cut into small pieces.
  2. Use the chicken water to boil the noodles until just tender. Drain and rinse with cold water to keep them firm.
  3. Heat a wide pan and add butter. Add the chicken and stir gently. Let it brown slightly without drying out.
  4. Add cabbage, sweet pepper, and onion. Stir gently and cook briefly so vegetables stay bright and crisp.
  5. Add noodles to the pan. Pour in soy sauce and Worcestershire sauce. Mix carefully, taste, and adjust seasoning if needed.

Notes

This Belizean chow mein recipe is best cooked gently. Do not overcook noodles or vegetables. Add sauce slowly and taste as you go for balanced flavor.
