Ingredients
  

  • 4 ripe bananas mashed
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tbsp vanilla
  • 1 pinch salt
  • 2–3 tbsp evaporated milk or any milk
  • oil for frying

Method
 

Mash the bananas
  1. Place the ripe bananas in a bowl and mash until soft. Leave a few small lumps for a better fritter texture.
Add sugar, spices, vanilla, and milk
  1. Mix in the brown sugar, cinnamon, nutmeg, vanilla, and salt. Add a bit of milk to loosen the batter.
Add the flour
  1. Sprinkle the flour in slowly. Mix until the batter is thick, soft, and falls off a spoon. Adjust with milk or flour if needed.
Heat the oil
  1. Warm oil in a pan over medium heat. Test with a small drop of batter. When it rises and sizzles, the oil is ready.
Fry the fritters
  1. Drop small spoonfuls of batter into the oil. Fry until golden on the edges, then flip. Cook 2–3 minutes per side.
Drain and cool
  1. Remove fritters and place on paper towels or a rack. Cool for 1–2 minutes before serving.

Notes

  • Use very ripe bananas for the best taste and texture.
  • Keep oil at steady medium heat to avoid burning or soggy fritters.
  • Add more cinnamon or vanilla if you like a stronger warm flavor.
  • Serve with honey, powdered sugar, or syrup. Great with tea or coffee.
