Mash the bananas
- Place the ripe bananas in a bowl and mash until soft. Leave a few small lumps for a better fritter texture.
Add sugar, spices, vanilla, and milk
- Mix in the brown sugar, cinnamon, nutmeg, vanilla, and salt. Add a bit of milk to loosen the batter.
Add the flour
- Sprinkle the flour in slowly. Mix until the batter is thick, soft, and falls off a spoon. Adjust with milk or flour if needed.
Heat the oil
- Warm oil in a pan over medium heat. Test with a small drop of batter. When it rises and sizzles, the oil is ready.
Fry the fritters
- Drop small spoonfuls of batter into the oil. Fry until golden on the edges, then flip. Cook 2–3 minutes per side.
Drain and cool
- Remove fritters and place on paper towels or a rack. Cool for 1–2 minutes before serving.
Notes
- Use very ripe bananas for the best taste and texture.
- Keep oil at steady medium heat to avoid burning or soggy fritters.
- Add more cinnamon or vanilla if you like a stronger warm flavor.
- Serve with honey, powdered sugar, or syrup. Great with tea or coffee.
