Bring a large pot of water to a boil. Add the Chinese egg noodles and cook for 3–5 minutes, until al dente.
Drain the noodles and rinse with cold water to stop cooking. Set aside.
Heat vegetable oil in a wok over medium-high heat.
Add garlic and onion; stir-fry until fragrant.
Add bell pepper, broccoli, and chicken or tofu. Stir-fry until vegetables are tender.
Add cooked noodles, soy sauce, oyster sauce, and sesame oil. Stir well to combine.
Season with salt and pepper to taste.
